mason jar breakfast

There was quite some hype on fb on mason jar meals, and therefore I decided to check it out. From some of these websites, it seems simple enough to make one. But what I loved was the variety of recipes available. Then again, variety can also mean that there are just way too many choices and therefore where do I start.

So I wanted something simple for breakfast - simple i.e. minimal hassle and effort but taste good. And decided it would be a mix of fruits, nuts and veggies. As for the dressing, started off with off the shelf balsamic vinegar and somehow as the weeks passed, got a bit more adventurous and started making  my own vinaigrette. Sometimes I even surprise myself of what I can do.

As the weeks gone by, I've started to learn what sort of ingredients that I can incorporate in my mason jar breakfast. First thing first is the dressing at the bottom. Then the bottom layer is always chunky fruits e.g. apples, guava & even melon. Then other smaller fruits or veggie e.g. grapes, plum, tomato, corn, mango, pomegranate, blueberry, cherry etc. Next up is the nuts e.g. almond, walnut, sunflower seed, pecan, pistachio etc. Finally the top is any leafy green which majority of the time is all sorts of lettuce. Of course one can add on cheese just before the leafy greens. The rational of having the leafy greens on top is so that when you pour out your mason jar into a bowl, the leafy greens would be the base of your breakfast. Why the nuts at the top? So that it remains dry and not soaked in the dressing for days before one consumes it.

This ritual of having mason jar breakfast which started when I started my new job is still strong and still a daily morning ritual, even on Saturday mornings. I've actually shed a few kilos just by changing my breakfast diet. Am grateful what started as an experiment yielded nice results. The bonus is when some of my colleagues wanted to try (did try) and share favourable feedback - you know you've done something right if someone ask whether they can buy from you.

My hope is that I continue on a ritual to eat healthy particularly raw & clean
